I’ve talked a lot about healthy breakfasts before and how utterly feasible they really are. Don’t get me wrong, there are days when I stand in the kitchen scratching my head trying to figure out what to make and can only come up with cereal or toast as options. There is always homemade instant oatmeal but the kids aren’t crazy about that. This past weekend we had a houseful and I wanted to make sure I wasn’t slaving away in the kitchen at breakfast time but able to sit and relax with my guests. I found two make-ahead recipes – one for the crockpot to cook overnight and one to make the night before and cook in the oven in the morning.
How easy it was to simply turn off the crockpot and turn on the oven and in 30 minutes have two large breakfast choices for a crowd without much of a fuss? My past experience with breakfast is probably similar to yours. I would stumble into the kitchen (nope, I’m not a morning person, how did you guess?) and with barely-open eyes grab a box from the selection of breakfast cereals in the cupboard.
