I received a crockpot for my birthday present and I have an entire week’s worth of crockpot recipes planned in my healthy meal plans series. However, I have become addicted to ground turkey and brown rice meals lately and this is at the top of my list of healthy recipes.
Ground Turkey Taco Skillet
This is one of my favorite healthy recipes and I make it ALL the time – it’s tacos without the shell. I love it and it’s so quick and easy! Even better with a dollop of sour cream on top!
Lean ground turkey (1 package)
1 1/2 cups black beans (1 can)
1 cup uncooked instant brown rice
1 cup water
1 tbsp taco seasoning
1/2 cup corn
1 cup salsa
2 tbsp cilantro
- Sauté turkey. When the turkey is done, add seasoning, beans, water, rice, corn, salsa and cilantro and let simmer until rice is tender.
- Add cheese and serve with sour cream, if desired.
