I love meatless Mondays, but sometimes I just need to make something easy and simple for dinner and I love that this sliders are also healthy! They are totally kid-friendly – my kids thought they were the best thing. My kids like spinach to begin with – raw or toasted – but when these are toasted you can’t even tell there is spinach hiding in there! I like the little hamburger rolls for the sliders. Sometimes I use potato bread and sometimes whole wheat. Just watch the ingredients to make sure they are made with unbromated flour!
