This has definitely become one of my favorite healthy recipes for summer. I love love love the fact that it can be eaten hot OR cold! This is going to be my go-to summer salad recipe for potlucks and lazy dinners!
Healthy Recipes: Basil Pesto Tortellini Salad
We are all looking for quick dishes to make at home but at the same time want to be eating healthy recipes, right? If you’ve been following my healthy recipes lately, you know I have become a bit obsessed about salad. That’s because my husband for one, has been requesting them. But also, they are so easy to make and you don’t have to have all of the exact ingredients or amounts for it to be absolutely delicious.
Also, salads are so easy to doctor up or down depending on what’s in your kitchen and then there is instant food waiting for you in the refrigerator.
If you have fresh basil growing at your house you can make homemade pesto. My sister-in-law makes fun of me because I am not a real outdoorsy person, but I do like container gardening and growing my herbs right outside my front door for easy picking. Check out these easy tips for growing basil!
Cannellini Beans Nutrition Information
Cannellini beans, also known as “white kidney beans,” are high-fiber beans that have a mild flavor. Cannellini beans can be beneficial for weight loss, as they are rich in fiber, protein and other helpful nutrients. These beans cook up so fast when using dried beans – an added bonus!
- 1 package fresh cheese tortellini
- 1/2 cup fresh basil pesto
- 1/2 can cannellini beans
- 1 pint organic grape tomatoes
- Cook up tortellini according to package directions.
- When cooked, add basil pesto and toss to distribute evenly.
- Add beans and tomatoes and serve with bread, if desired!
