If you are anything like me, you are never sure what to eat in the summer that will be both satisfying and healthy. I assure you that healthy recipes are possible in the hot summer months. All of these foods are readily available in the summer, healthy, low-fat, and easy to prepare and I guarantee your kids will eat most of them!

Chilled Soup

Soup is great during any time of year, but in the hot summer months, you might not want your soup to be hot as well. This is the perfect time to try some new chilled soups. Cucumber-dill is excellent during the summer as it is a cold soup that also helps to be really healthy and low-fat. Another good option is gazpacho, which is a type of cold tomato soup.

There is no reason you can’t have some fun food on a stick with little more than delicious fruit! These are good when you need a healthy snack on the go, are having a barbecue and want an easy way to eat the fruit, or simply to make it fun for the kids.

Not only is fruit good for you, but so are vegetables! Summer is perfect for eating your veggies, especially when you fire up the grill. There are so many ways to have grilled vegetables, making this an ideal healthy summer food. You can make kebabs, have grilled corn, put some fresh vegetables in a foil packet to put on the grill, or make some slow cooker chicken fajitas in your crockpot for an easy Mexican-inspired meal.

It is hot outside, you are just coming back from the beach, and all you want is something cold. Instead of grabbing for that ice cream, why not enjoy a nice ice pop you made yourself? There are many popsicle molds that let you add any ingredients you want, such as making a lemon-strawberry pop or one that has all your favorite berries in it.

Salad

This is the ultimate summer food since it is easy to prepare, is a cold dish, and lets you put in any ingredients you like. You can have a simple garden salad with lettuce, cucumber, and tomato, add some barbecue chicken and cheddar for a Mexican Layer Salad (my personal fave) or make a big chef’s salad with turkey, ham, and hard-boiled eggs. Salad is also a good way to use up all those veggies in your refrigerator before they go bad.

If you are outside grilling chicken or burgers, why not add some corn on the cob? Grilled corn on the cob is healthy, low-fat, and really easy to make. It adds a great side dish, or you can have corn with your favorite salad and some potatoes for a vegetarian meal during the summer.

Fish

When it comes to protein, fish is one of the best you can choose during the summer. It is plentiful, easy to find, and often more affordable during summer and very simple to make things like fish tacos. Try different types of fish to get your omega-3 fatty acids, such as salmon, halibut, cod, and tuna.
