Asian Ground Turkey Rice Skillet

This Asian Ground Turkey and Rice dish is one of my new favorite healthy recipes. This dish is so easy to whip up on a weekday and have it ready for dinnertime without a lot of rushing or fuss!

While I am a butcher’s daughter, I am not big on eating beef. I even could go without eating poultry but my family loves it. Unfortunately, not all ground beef recipes can be successfully substituted with ground turkey and still taste good! But this Asian ground turkey and rice is perfect.

I was super excited when I found this recipe.

I loved that I could prepare it in stages and throw it all together at the end when it was time to eat. It was one of those crazy Mondays when both girls have gymnastics and then one has girl scouts and then we get to go home for a little more than an hour before I have to go back out to pick up the oldest!

I prepared the rice in the afternoon before the kids got home from school, which is easy enough to do with some brown or basmati rice. Or brown basmati. Isn’t that the perfect combination?

Then when I had a few minutes in between the kids coming back from school, which is when I take a break from working, and going out to activities, I cooked up the turkey. I actually used matchstick carrots instead of grating and chopping raw carrots. HUGE timesaver! I put those in with the ground turkey to cook together.

I didn’t even add the seasonings until later! I just added what I could to a small bowl so they would be ready to go when it was time to eat.

My family LOVED this. I was amazed that even my husband liked it and he scarfed down the leftovers before I could grab them!

Vegetable fried rice was always one of my favorites at the chinese restaurant but it’s become so hard to control what is the food when we get takeout. I’d much rather make it myself.

Asian Ground Turkey and Rice

This Asian Ground Turkey and Rice dish is a great healthy recipe. It is so easy to make on a weekday without a lot of rushing.

  • 1 teaspoon olive oil
  • 1 pound lean ground turkey
  • 1/2 yellow onion diced
  • Handful matchstick carrots
  • 2 cloves garlic pressed
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 large eggs beaten
  • 1/2 cup frozen peas
  • 2 cups cooked brown rice
  • Cilantro for garnish if desired
  • Green onions for garnish if desired
  1. Add olive oil to a large non stick skillet over medium heat and cook turkey, onion, carrot, garlic, ginger, and black pepper, until the turkey is done.
  2. Stir in soy sauce and vinegar.
  3. Push meat and veggies aside and pour in the egg.
  4. Scramble the eggs then stir into meat/veggies.
  5. Stir in peas and brown rice and cook until heated through.
  6. Serve with garnishes.
