However, if you’re using phyllo cups that have been refrigerated, then you don’t necessarily need to thaw them before baking. It really just depends on your preference. How Do You Keep Phyllo Cups from Getting Soggy?

If you’ve ever made phyllo cups, you know that one of the challenges is keeping them from getting soggy. There are a few things you can do to help prevent this. First, make sure the phyllo cups are completely dry before you add any filling. If they’re even slightly damp, the filling will cause them to steam and become soggy.

Second, don’t overfill the phyllo cups. You want just enough filling to give them flavor and texture, but not so much that they’re overflowing. Finally, if you’re using a wet filling, like a fruit puree, add a little bit of cornstarch to thicken it up and help it hold its shape. With these tips, you can enjoy crisp, delicious phyllo cups every time.
