I took my kids on their first camping trip in the White Mountains! As much as I hesitated going away on a vacation when there is much unrest and sadness in our country, my kids really needed some fun. And I needed a break. We are so fortunate to be able to do this. We went on an adventure the other day! Started out by going to a state park on a river, then headed for a hike looking for a waterfall. We ended up here, thanks to a covered bridge hunt. This amazing and gorgeous lake was our last stop that day and was the cherry on top to a spontaneous day!

The kids and I were so lucky to go to the beach the other day. It’s been so crazy hot and there’s really not much we can do in this summer of Covid. As long as we go during the week during low-tide it’s possible. What kinds of things have you been able to do to have fun this summer?

We went to a lavender farm today. I wasn’t expecting much but I wanted to get out of the house and give the kids something to do besides roblox. It was wonderful! We had the field to ourselves so we were able to take our masks off and cut lavender while marveling at the bees collecting nectar and pollen. They actually stick their tiny little heads into the open lavender flowers. My friends 3yo was able to run run run. We treated ourselves to goodies from the gift shop which are amazing. Soaps, honey and a special treat - dandelion jelly that the farm owner gave to my 10yo son who loves to cook. We tried it in iced tea and it’s amazing!

CHICKPEAS!! I love them. I love them in a salad. I love them in soup. I love them in cookies or toasted as a snack or mashed in a sandwich. Chickpeas are great for losing weight since they’re loaded with fiber, which keeps you feeling fuller longer. They are also a great filler for those seeking fewer carbs or less gluten. Day 5 of living gluten-free! It’s not been an easy week, especially for someone that loves all things gluten. I had a mini breakdown last night but I didn’t crack! I would love to hear about others who were former carb-queens (or kings) that were able to kick the gluten habit. I am struggling with finding things to eat that don’t include meat. I’m loving this breakfast smoothie with coconut oil, sunflower seeds, cocoa, & peanut butter.

Day 1 of living low-carb! I’ve been struggling with feeling sluggish and weird pains, irregular cycles and headaches for so long. After reading @annlouisegittleman I am going to try it out. I’m not one to eat low-carb so this will be interesting! But I am excited to try it and see how I feel - I’m just nervous because I’m not a big meat eater. These two girls love to be outside, like most dogs! One of them will stay outside all day long but hates getting splashed with water and of course swimming. The other one only likes to be outside with my husband and loves swimming and any water activities! The are so funny. So very different but they are the best of friends from the very first moment they met.

We spent part of the day at a swimming hole at a river! The kids (and my brother) jumped in at this spot! They estimated it was about 10’ deep! That was not for me. Happy July 4th! My kids made this amazing cake. I struggle with this holiday and this year it’s bittersweet to be with my brother and his family for my dads 5th angelversary that also falls on my grandmas birthday tomorrow. I haven’t seen my family in 7 months and I’m so grateful we’ve been super careful and #stayinghome so that we were able to visit to be together for this event. #missingmyparents #family #july4th

It was a gorgeous afternoon at the beach yesterday. It started out cloudy and my 9yo wanted to go home but we ended up checking out these tide pools and looking for cool rocks and watching the snails make their way across the sand. It’s definitely been a struggle these last few months to stay active in the midst of a pandemic. It’s stressful and different and I just wanted to crawl under the covers and sleep through this thing. But we can’t do that. We can’t neglect ourselves. We have to be good to ourselves or we WILL shut down and won’t be able to get ON WITH OUR LIVES. We are still living!
