Loaded Cauliflower Au Gratin Recipe

When I was growing up, my parents ALWAYS put cheese on the cauliflower. Who would have known that it would become a lifestyle decades later? It really was the only way for me to eat my veggies – my dad was the master at making cheese sauce but I’m not sure he actually ever made cauliflower au gratin. It was more of a dumping of cheese on top of the cauliflower. Oh well.

Now my mother-in-law makes gratin dishes quiet often and they are absolutely my favorite. What can be better than food sandwiched in between cheese and cream and spices?

Why is Cauliflower so healthy?

According to Medical News Today, “consuming fruits and vegetables of all kinds has been found to reduce the chance of developing many adverse health conditions” but cauliflower helps in the following ways:

Digestion
Cauliflower is high in fiber and water. Both are important for preventing constipation, maintaining a healthy digestive tract, and lowering the risk of colon cancer.

Cancer
Cauliflower contains antioxidants that help prevent cellular mutations and reduce oxidative stress from free radicals.

Memory
Choline is an important and versatile “vitamin-like factor” in cauliflower that helps with sleep, muscle movement, learning, and memory.

Strong bones
A low intake of vitamin K has been associated with a higher risk of bone fracture and osteoporosis.

Healthy circulation
A high intake of fiber has been found to reduce the risk of cardiovascular problems.

Loaded Cauliflower Au Gratin

Prep time: 10 minutes

Cook time: 15-20 minutes

Serves: 6

Ingredients
4 cups cauliflower florets, chopped into bite-sized pieces
6 oz. cream cheese, cut into chunks

1/4 cup heavy cream
3 tbsp unsalted butter, softened
1/4 tsp garlic powder
1/2 tsp dried dill

Sea salt and black pepper, to taste

1 1/2 cup Italian cheese blend, shredded

4 strips bacon, cooked and crumbled

1 tbsp fresh chives, chopped

Directions

  1. Place top oven rack in the center position and preheat oven to 400°F.

  2. Place the cauliflower in a steamer basket on top of a pot with boiling water and steam until fork-tender, around 6-7 minutes. Remove from heat and transfer cauliflower into a cold water bath to prevent further cooking. Drain well and pat dry. 

  3. Transfer steamed cauliflower to a large bowl and add cream cheese, heavy cream, butter, garlic powder, and dried dill. Season with salt and black pepper, to taste, and toss to combine.


  4. Transfer to oven-safe casserole dish and top with shredded cheese blend and crumbled bacon. Place in pre-heated oven and roast until cheese is melted and nicely browned on top, around 8-10 minutes.


  5. Remove from oven and serve immediately topped with fresh chives. Enjoy!

    Hello there! I prepare dishes with cauliflower pretty often. I know not many people like it, but, it is really healthy and if you cook it right tasty too 🙂
    I make a similar gratin, but I don’t add the butter (only to grease the baking dish), in a cream is more than enough fat, but it’s only my opinion. 🙂

    I love love love cauliflower au gratin and this is a beautiful recipe! If this were at thanksgiving my plate would be 3/4’s of this and a smidge of turkey!! Ok, maybe ALL this if I thought I could get by with it!
