I’m always looking for new healthy recipes and the first time I made this meal I was skeptical whether or not it would be bland or yummy. Well…it was SUPER yummy! We ate this easy cheesy italian chicken over pasta – it was so moist and flavorful I was amazed at how simple it was to prepare.
I lived in Florence, Italy, for four months while I was in college so I know that good Italian dishes are often very simple and just require fresh ingredients.

Healthy Recipes: Easy Cheesy Italian Chicken Recipe
Core and chop about 4-5 roma tomatoes. Thinly slice two cloves of garlic.
Place all ingredients in a bowl and pour in a few tablespoons of extra virgin olive oil, a generous amount of salt and pepper, a teaspoon of sugar, a couple tablespoons of flour {since the chicken will produce so much liquid}.
I used fresh baby spinach that I chopped and added to the tomato mixture.
Season boneless skinless chicken breasts with salt and pepper and add tomato mixture to casserole pan. Place in a 350 degree oven and bake about 20 minutes covered or until the chicken is “almost” done.
Take the “almost” done chicken out of the oven and sprinkle mozzarella cheese liberally over the top. Place the chicken under the broiler for a few minutes {keep an eye on it!} until the cheese is golden brown.
When you pull the chicken out of the oven, sprinkle some fresh basil on top and the heat of the dish will wilt the basil.

Italian Chicken Recipe
Ingredients
- 4-5 Roma Tomatoes, chopped
- 2 Cloves Garlic
- 2-3 Tablespoons Olive Oil
- Salt and Pepper
- 1 Teaspoon Sugar
- 2 Tablespoons Flour
- 1 Handful Baby Spinach
- 2-3 Boneless Chicken Breasts
Instructions
- Add garlic and tomatoes to a bowl and pour in olive oil, a generous amount of salt and pepper, sugar, and flour.
- Chop fresh baby spinach and add to the tomato mixture.
- Season boneless skinless chicken breasts with salt and pepper and add tomato mixture to casserole pan.
- Place in a 350 degree oven and bake about 25 minutes covered or until the chicken is juicy.
- Take the chicken out of the oven and sprinkle mozzarella cheese liberally over the top. Place the chicken under the broiler for a few minutes {keep an eye on it!} until the cheese is golden brown.
