This week has been slightly crazy with scouting events and birthday parties but I am actually looking forward to February vacation! I am excited to have a low-key vacation doing fun things with my kids. The one thing that keeps me sane through all of this is meal planning so I always have easy weeknight dinners on hand ready to go. Today I am going off-book and making this Slow Cooker Garlic Chicken and Couscous.
