For this recipe I measure the applesauce. If you would like to use apple shred or chunks, use 1 cup apple (1-2 apples) and 1/4 cup applesauce.

- 2 teaspoons cinnamon
- 2 cups all-purpose flour or white whole wheat flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1/4 cup plain yogurt
- 1 cup unsweetened applesauce
- ⅓ cup honey
- 2 eggs
- 2 teaspoons pure vanilla extract
- 6 tablespoons unsalted butter (melted)
- 1/3 cup chopped walnuts (optional)
For the streusel:
- 1/3 cup quick oats
- 2 tablespoons flour
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons cold unsalted butter (cut into cubes)

In a small bowl, stir together the chopped or grated apple, 2 tablespoons brown sugar, and 2 teaspoons cinnamon and let sit.

Gradually mix in the dry ingredients until just combined, being careful not to over mix. Gently fold in the apples and any cinnamon-sugar left in the bowl. Transfer batter to the prepared loaf pan.
Make the streusel:
In a medium bowl, stir together the oats, flour, brown sugar, and cinnamon. Use your fingertips to work the cold butter into the oat mixture. It may take some elbow grease to mix this up but it will be worth it! Sprinkle the streusel over the bread batter in the pan and gently press it down with your hand.
Bake bread for about 60 minutes, until a toothpick or knife comes out just about perfectly clean. Let bread cool in the pan on a wire rack for 15 minutes before carefully removing to the rack to cool completely before slicing and serving.
