Healthy Meal Plan February 9
We are in the thick of the school year and so busy with activities which means I need to be on top of our meals so I don’t get caught without dinner. I usually like to plan a few easy dinners and then a few more time-consuming dinners for days when I can prepare them ahead of time.
Sometimes we even plan on having pancakes for dinner which is fine as long as there’s a protein to go with it like sausage or turkey bacon. My husband just brought home a belgian waffle maker and that’s what we had for dinner last night. They were so delicious!
I know it’s hard for busy parents to get things ready for meals when we all have crazy schedules. You have to find what works for you. I work at home so I like to use my lunch break to start getting dinner ready if I can. Maybe you have a busy work schedule during the week so meal prep on Sunday’s might work? Do as much as you can to prepare produce and meat for recipes and have them ready to go. Measure out your spices and keep them in containers. Buy frozen onions so you don’t have to bother slicing those.

- Monday / Sweet and Sour Meatballs with Rice
My kids love any kind of meatballs! My sister-in-law made these sweet and sour meatballs when we were visiting over the holidays and I finally made them myself. They were super easy to make in the instant pot/electric pressure cooker. - Tuesday – Turkey Burgers, Mashed Potatoes and Roasted Broccoli
This is one of my favorite meals! Turkey burgers are pretty easy and so delicious and healthy. Did you know you can even cook mashed potatoes in the crockpot and mash them there, too? It makes cooking and cleanup super easy since there’s no draining of water. - Wednesday – Creamy Ziti
Creamy ziti night is great – you just have to cook up the ziti and mix it with the sauce and cream cheese mixture. Here’s the creamy ziti recipe I love! - Thursday – Little Hot Dogs and Fries
These are great when you want something a little different but still kid-friendly. Sometimes we’ll add some cut veggies and dressing, too! - Friday – Whole Chicken in Instant Pot
Have you ever made an entire chicken in an instant pot? Mine is actually an electric pressure cooker but it’s basically the same thing. I like to serve my whole chicken with seasoned chinese vermicelli on the side.
