Healthy Meal Plan February 16

I love having my meals planned out. I am NOT an organized person by any means but I am a mess when I don’t have meals planned. It just makes the week so much easier to handle when you have work, kids, pets, activities and housework to do!

Meal plans are an easy way to reach your health and lifestyle goals.

Here’s a meal plan to get you started for next week. Hopefully it will help take some of the stress out of your week by having one thing done and planned for!



Healthy Meal Plan February 16

  1. Monday / Pesto Pasta with Zucchini and Peas
    This is one of my very favorite quick weeknight meals to make AND to eat! It’s super delicious and reminds me of the vegetarian pasta dishes my host mother made for me when I was studying in Florence, Italy. I just heat up a tablespoon of olive oil, add the pesto (usually an entire small container) and then I add shredded zucchini. The kids don’t even notice the zucchini with the spaghetti! I boil the peas with the pasta. Make sure you use a good pesto – I like to get the fresh refrigerated kind.
  2. Tuesday / Chicken Drumsticks and Vegetables
    When you have a bit more time you can assemble this casserole ahead of time and then bake it up for an hour. I like this recipe using chicken and potatoes. Sometimes I add grape tomatoes on top if I have some.
  3. Wednesday / Red beans and rice
    I love beans and will eat them every day if my family would not complain! But they don’t love beans as much as I do. So I was really pleasantly surprised and happy when my husband scraped the pan clean after I made this amazingly easy recipe for red beans and rice.
  4. Thursday / Spaghetti and Crockpot Meatballs
    I am not a big fan of red meat so I like to make my meatballs with ground turkey. I just find them a bit more tender. My mom used to make the best meatballs so I never used to make them myself but since she’s been gone I’ve had to find a recipe to use. This recipe for Italian meatballs is so delicious AND you can put them in the crockpot to cook! SO easy.
  5. Friday / Frittata and Bread
    Friday nights are for easy dinners! I’m all for pizza but sometimes we don’t that greasiness. A frittata is such an easy and convenient way to use up leftovers from the week. I love to make my frittata with leftover noodles and any vegetables I have like spinach or zucchini or peppers.
