Healthy Meal Plan May 30

I haven’t been posting healthy meal plans for awhile because of the coronavirus. Like most people (if not all), it’s knocked me for a loop and for awhile we were alternating between rice and pasta. My friend mentioned how she has been on the “all-carb” diet for awhile now. Yup, it’s just been carb-this and carb-that, everything carbs because it’s easy or it’s comforting or we just can’t wrap our heads around anything real.

There’s also the fact that it’s not always easy to find what we want in the grocery store AND not always easy to actually GET to the grocery store. In the beginning most of us were going out once every few weeks unless we had to work outside the home.

The other day I found a shortage of pasta at the grocery store. Seriously? It appears everyone really is on this all-carb diet these days. Thankfully all I was looking for were elbows to make a summery-taco salad and found one of the last boxes of those.

It’s also been Ramadan the last month which means we don’t eat until sunset which has been close to 8:00pm. It’s definitely not easy and toward the end of the month I get tired of making soup and a meal every single day. Last night I was making tacos for the second-to-last night of Ramadan dinner and I put the taco shells on the bottom rack of the toaster oven and suddenly there was smoke pouring out of the oven. I opened it which of course fed the fire with oxygen and the toaster oven erupted in big red flames! OMG it was so scary and in the moment I couldn’t think of what to do other than to close the oven and unplug it. It didn’t even occur to me to yell “FIRE!” for my husband to help I was just screaming his name and he probably thought it was just a mouse or something. We have a mouse problem, but that’s another story.

So…crunchy whole-grain corn tacos turned into soft tacos, which was fine. They were also made with ground turkey. 95% extra lean turkey. So not the best tacos in the world but hey, we had food. That’s one of the most important things these days and I am so thankful for that. I am thankful I can plan my meals out for the week. I am thankful my family is safe at home.



Healthy Meal Plan May 30

  1. Vegetarian Chili Mac
    This recipe for veggie chili mac is probably the best one I’ve ever made. The kids LOVE it and even eat the leftovers. I add cumin and cilantro to it, but other than that I make it as is. This past week I did add 1/2 pound ground turkey to it but I usually stick to different kinds of beans. This one is quarantine-friendly as I used frozen onions and frozen peppers.
  2. Cheesy Mexican Lentils, Beans and Rice
    So here’s another vegetarian recipe with beans and rice but this one uses lentils. It adds an extra layer of texture that I actually enjoy! The lentils add so much more nutrition and they are just so sneaky in this dish, my kids don’t even notice them. It’s such a filling dish you won’t miss the meat.
  3. Tuna Wraps and Fries
    So this dish is self-explanatory. We love tuna wraps and will mix up the tuna with mayonnaise, salt, pepper and onion and add it to the wraps with tomato, cucumber and any other salad fixings.
  4. Sausage, White Beans and Spinach Skillet
    At the beginning of the quarantine, my husband started buying Italian chicken sausage from Costco. It was great because it was super easy to prepare and we could freeze it also. There are so many things to do with sausage but this is by far one of my family’s very favorite recipes. I added extra tomatoes so it was more saucy and we ate it with crusty bread. Oh so good!
  5. Chicken Spaghetti
    When I was a kid, my dad used to make dinners on the weeknights and one of his signature dishes was a cheesy spaghetti with chicken. I always wanted to replicate it but didn’t want it to be all cheese sauce the way he made it. I love this recipe for chicken spaghetti because the chicken is shredded and the sauce is super cheesy without being overpowering.
