Easy Oven Baked Salmon Recipe with Rice Moroccan Style

We don’t eat enough fish. I like fish but I just never seem to get around to making it. So this week I made it a point to make this easy oven baked salmon recipe. This recipe is so easy using the fish right out of the wrapper.

Easy Oven Baked Salmon Recipe with Rice Moroccan Style

Serves 4

INGREDIENTS
1 large bunch cilantro, finely chopped
4 cloves garlic, pressed or finely chopped
2 tablespoons paprika
1 tablespoon cumin
1 teaspoon salt, or more to taste
1 teaspoon ginger (optional)
1/2 teaspoon cayenne pepper (optional)
1/4 teaspoon saffron threads, crumbled
3 tablespoons vegetable oil
juice of 1 small lemon
One salmon fillet (1 lb)
1 1/2 cups yellow rice
3 cups stock

DIRECTIONS

  • Add the ingredients of the marinade in a bowl, up to lemon juice. Mix together and add to top of salmon in dish. I like to add a grated tomato as well to the marinade. Cook covered for about 20 minutes at 375 degrees or until done.
  • Cook rice as desired.
