Seafood Paella Recipe

Healthy Recipes: Seafood Paella

Ingredients
1 boneless chicken breast
2 tbsp olive oil
1/2 cup frozen peas
2 carrots
1 cup yellow rice
3 garlic cloves
1 bay leaf
pinch saffron
salt and pepper
2 cups chicken stock
2 tbsp fresh parsley
1 medium piece whitefish
2tbsp fresh cilantro

Directions
Saute chicken in olive oil on medium-high heat. Meanwhile, add rest of ingredients except the stock, fish and cilantro to a bowl. Once chicken is done, add these ingredients to pan and stir until rice is mixed with the oil, about one minute. Add stock, cover and simmer on medium-low for about 15 minutes. When rice is almost cooked, add fish and cover again. Simmer until fish is cooked, then add cilantro and serve.

Porcupine Meatballs
Meat and rice balls cooked in tomato sauce or tomato soup. I prefer the tomato soup!

Cheese Lasagna
This is the recipe from the Barilla no-boil noodles box. Not too saucy and they kids loved it! I made one and froze one, using a mozzerella/parmesan cheese mix and Giada’s tomato basil sauce.

Black Bean Quesadilla
I have to say this is my all-time favorite meal. I could eat this for lunch and dinner if I were allowed. I take one tortilla and place it on the skillet, add cheddar or jack cheese, then a mixture of black or red beans mixed with green salsa, then another layer of cheese and fold. Cook over medium heat until browned then flip. Add sour cream. Voila.
Best. Meal. Ever. The only thing that could make this any better would be some cilantro-lime rice. Yum. Going to make this now, thank you.

Semolina Crust Pizza
My mother-in-law has perfected her semolina pizza crust but of course I never watched her do it so I don’t have the exact recipe. Semolina has so many health benefits, especially for breastfeeding, and it makes a chewy-crispy crust that is very satisfying. We like to add shredded zucchini and carrot to the top of the pizza, on top of the cheese with some dried oregano. YUM.

    I’ve been looking for a good recipe for pizza crust.  The Paella sounds yummy!  Thanks for sharing these great recipes! Sally

      @Sally Brown Thanks Sally! Even the kids like the Paella – my 2 year old told me it was yummy. I love that the semolina pizza crust has crunch without being hard.
