Easy Turkey Melt Recipe with Homemade Dressing

I love meatless Mondays, but sometimes I just need to make something easy and simple for dinner and I love that this sliders are also healthy! They are totally kid-friendly – my kids thought they were the best thing. My kids like spinach to begin with – raw or toasted – but when these are toasted you can’t even tell there is spinach hiding in there! I like the little hamburger rolls for the sliders. Sometimes I use potato bread and sometimes whole wheat. Just watch the ingredients to make sure they are made with unbromated flour! Easy Turkey Spinach Melts

Healthy Meal Plans: Week of January 20 - Easy Turkey Spinach Melts / Crockpot Butternut Squash and Chickpea Coconut Curry / Smothered Chicken / Flatlander Chili / One Pan Pasta

 

Ingredients
Sliders
12 Mini Hamburger Rolls
Fresh Turkey like Boar’s Head or store-baked
Provolone Cheese
Baby Spinach
Tomatoes

Dressing
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon white vinegar
2 teaspoons sugar
2 teaspoons sweet pickle relish
1 teaspoon white onion, finely minced (I use onion powder)
1/8 teaspoon salt
1 dash black pepper

Instructions
Lay out bottoms of rolls and slather dressing on each one. Layer tomatoes, spinach, cheese and turkey and add top of roll. Bake in oven at 350 for 5 minutes or until cheese is melted and tops are lightly browned.
