Each week I use the same template but switch up the meal ideas a bit according to what is on sale. Here is a fun and fresh healthy meal plan Volume 6 with quick and easy weeknight dinners that kids love!

This week I went for a more clean and fresh eating vibe as the weather is turning nice(er) here in New England and the kids want to play outside and who wants to eat heavy wintery food right now?

Meal Plan Shopping List

1 c. all-purpose flour
3/4 c. cornmeal
¾ cup Cornflake crumbs
3 T. sugar
1 1/2 tsp. chili powder
3 tsp. salt
1/2 tsp. ground cumin
1½ teaspoons crushed red pepper flakes
1/4 tsp. black pepper
3 tsp. baking powder
1 egg, lightly beaten
1 c. milk
4 T. butter

1/2 c. chopped onion
5 clove garlic
1 small green bell pepper, chopped
1 tomato
baby spinach
2 ribs of kale
1 (16 oz.) can stewed tomatoes, chopped
1 (6 oz.) can tomato paste
1/2 cup mayonnaise
1 c. frozen corn kernels, thawed

1 can sliced black olives
2 tablespoons ketchup
1 cup apricot preserves or jam
2 tablespoons apple cider vinegar
1 can chickpeas or dried chickpeas
1 can tuna, drained

1/2 cup dry quinoa
1 Tablespoon prepared pesto
4oz spaghetti
2 (1 lb.) box penne noodles

1 lb. ground turkey (or ground beef)
1 lb. plain pork sausage
3 frozen skinless, boneless chicken breasts

1/2 c. shredded cheddar cheese
2 – 2½ cups shredded mozzarella cheese
2 250g tub your favourite sour cream based dip
½ cup Swiss cheese
