In my family, anything with nuts, cereal and raisins, mixed in buttery, honey goodness is a hit. It was a plus that I added mini-chocolate chips to the honey nut snack mix just for fun. The kids didn’t even notice that most of the mix was raisin bran (Post brand, because it’s more natural than others). I made other substitutions based on what we had on hand. I used Post Raisin Bran and Honey Nut Fake-Chex, which was actually the store brand (Market Basket) and surprisingly naturally-sweetened! I also used only half the butter and honey since I was adding the sweetened cereal and chocolate chips, which served to hold the mix together a bit. Normally I would use coconut oil in place of the butter for extra nutrition.
This mix is a hit, so easy, quick and simple to mix up and bake, you really can’t go wrong making it as gifts for the holidays.
Honey-Nut Snack Mix Recipe
INGREDIENTS
4 cups toasted oat bran cereal (Raisin Bran, Bran Flakes, Grape Nuts Flakes, etc.)
2 cups uncooked quick-cooking oats
1 cup chopped pecans
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup butter or coconut oil
1/2 cup firmly packed brown sugar
1/2 cup honey
1 cup sweetened dried cranberries or raisins

INSTRUCTIONS
Combine first 5 ingredients in a large bowl; set aside.
Stir together butter, brown sugar, and honey in a small saucepan over
low heat, stirring until butter melts and sugar dissolves.
Pour butter mixture over cereal mixture, stirring to coat. Spread in
a single layer on an aluminum foil-lined 15- x 10-inch jellyroll pan.
Bake at 325° for 20 minutes, stirring once. Stir in cranberries, and
bake 5 more minutes. Spread immediately on wax paper; cool. Store
snack mix in an airtight container.
Note: For testing purposes only, we used Quaker Oat Bran for toasted
oat bran cereal.
YIELD: Makes 7 cups
PREPARATION TIME: 10 min.
COOKING TIME: Bake: 25 min.
