Homemade Lemon Ice Cream
For some reason, lemon ice cream is not the first flavor I would pick. But, like most kids, mine love lemon and they are so excited about this Homemade Ice Cream Recipe! It’s so super easy and totally natural that I am such a fan of this recipe these days.
Kids get bored in the summer. There is no way around it. My kids are visiting their cousins and even though they are all together and have missed each other, they still get bored and then the trouble starts. Making homemade ice cream is a good way to keep them busy, especially if they can help prepare the lemon ice cream in a really cool ice cream maker!

Refreshing Homemade Lemon Ice Cream
Ingredients
- 3 Large eggs
- 3 Large egg yolks
- ¼ Cup maple syrup
- ¼ cup lemon juice
- 1 Tbsp lemon zest
- 6 Tsp butter
- 3 Cups coconut milk
- Pinch of salt
Instructions
For the Lemon Curd
In a medium bowl mix the eggs, egg yolks, and maple syrup in a medium bowl.
Stir in the lemon juice and lemon zest. Put the bowl over a saucepan of barely simmering water, without touching the water.
Whisk constantly until mixture thickens, around 5 – 10 minutes.
Remove from the heat and add butter, mix for 3 more minutes.
Let it cool for 30 minutes.
Take to the refrigerator for at least 3 hours.
For the Ice Cream
In a bowl mix the coconut milk to a whipped cream consistency.
Add the salt, and lemon curd and mix until well combined.
Pour the mix into ice cream maker and mix it according to the maker’s instructions.
Serve and enjoy.
Notes
You can use another citric to make the curd, like passion fruit, or even strawberries.
