Our water heater quit on us this past weekend. I mean, it literally burst at the seems and I can just be thankful that a) we were home at the time and were able to contain it to just about an inch, and b) it came out the top and not the rusted bottom. The HVAC people told us today that we were lucky it didn’t burst out the bottom since then we would have had 40 gallons sitting in our finished basement and ruining everything, including our new furnace! So it’s been a bit like camping out, but at least we had electricity and heat. So it’s been a challenge trying to feed the family with minimal dishes since I’ve had to let things just pile up in the dishwasher or rinse the bigger items with cold water.
This morning I decided to make something yummy for the family and decided on my Oatmeal Pancakes with banana, walnuts and chocolate chips. The kids loved them and had no idea how healthy they were! Sometimes I also add flaxseed and/or applesauce in place of the oil. They are so quick you wouldn’t believe it. And so much better than the boxed stuff.
Oatmeal Pancakes
1/2 cup quick oats
1 cup milk
1/4 cup wheat flour
1/4 cup white flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp oil
1 egg
1 banana, mashed
1/4 cup chopped walnuts
1/4 cup mini chips
Mix oats and milk and let sit for 10-15 minutes to soften. Add the other wet ingredients. Mix dry ingredients and add wet ingredients and blend. I also added a splash of vanilla and cinnamon. Cook on skillet like normal pancakes until golden. These brown very quickly but take a little more time to cook with the bananas than boxed pancakes.

This sounds really delicious. The best part is that you can vary the recipe by mixing in whatever are your favorite oatmeal add-ons!

I have a preschooler and a toddler and the pancakes disappeared very quickly!
