When I was a kid, my dad used to do most of the cooking. He was home with me and my brother in the afternoons and was able to make a good dinner for us most days. My mom worked so hard and came home late some nights.
When my dad cooked, he always had the music on. It just made him so happy. I can remember he learned how to make homemade french fries, though they weren’t straight – he cut them in round slices and then fried them. Of course they still weren’t totally healthy but at least they were without all the extra ingredients of bagged fries. Back then we didn’t have organic or all-natural options!
These Italian Roasted Potato Bites remind me so much of my dad’s homemade french fries. They remind me what an amazing dad he was and how much he enjoyed cooking for us and hanging out with us after school. I am so lucky to have had that growing up.
And so now, in my dad’s honor, I will make this potato bites recipe for MY kids on Super Bowl Sunday, the day that they get to have appetizers for dinner and stay up for the halftime show.
Here’s another delicious potato recipe you can make as an appetizer – air fryer potato wedges!

Now, most kids like to have some tomato-ey sauce with their potatoes – either marinara or ketchup. I think I would opt not to use the marinara as I like my potatoes more savory. But to each their own – you can do it either way!
But seriously, how hard is it to cut up some potatoes and bake them in the oven for some amazing-looking (and tasting) little appetizer treats?
Should You Boil Potatoes First Before Roasting?
When it comes to roasted potatoes, everyone wants that crispy outside and fluffy inside. But should you command your potatoes to hop into boiling water first, or just straight into the oven for roasting? Well, depending on how much time you have, boiling them first is usually a great idea. Boiling not only speeds up the cooking process, but it also ensures that your roasted potato bites hold their shape.
Of course, if you’re short on time and need an instant snack…straight-to-oven roasted potatoes will do the trick! So while switching up your routine isn’t always so bad, boiling potatoes before roasting is definitely recommended when possible.

Which Type of Potatoes are Best for Roasting?
Roasting potatoes is a delicious way to enjoy this humble vegetable. You’ll want to choose a variety of potato with a high starch content. These will produce roasted potato bites that are golden brown and crispy on the outside, yet light and fluffy on the inside. The best varieties of potatoes for roasting are Russet potatoes, Yukon Golds, or red-skinned potatoes.
Along with the classic seasonings like salt and pepper, roasted potatoes can be taken up several notches by adding garlic, rosemary, paprika, or even truffle oil into the mix! Roasted potatoes make an excellent side dish for roasted chicken or steak!

What Happens If I Marinate Potatoes in Olive Oil Overnight?
Marinating potatoes in olive oil overnight can be a great way to enhance their flavor. The oil seeps into the potatoes, making them incredibly moist and tender when cooked. However, it’s important to note that olive oil can turn rancid if left at room temperature for too long. If you decide to marinate your potatoes overnight, make sure you store them in the refrigerator. Also, remember that a little olive oil goes a long way, so don’t go overboard!
