Maple Cinnamon Oatmeal Muffins

My 10 year old daughter complains about my “healthy snacks” all the time. I think she would eat doughnuts all the time if I let her. These maple cinnamon oatmeal muffins are actually one snack that she approved – REAL maple flavor hearty muffins – you can even add some diced walnuts in the recipe while baking. Just sprinkle it on top.

Oatmeal is super healthy!

According to EverydayHealth.com, you should east oatmeal every day for the following reasons:

  • Oats contain both soluble and insoluble fiber
  • Oats make an easy, balanced breakfast with protein
  • Oats provide important minerals
  • Oats are naturally gluten-free
  • Oats could help you control your weight

I love that these naturally healthy oatmeal muffins are actually flavored and sweetened naturally by maple syrup and maple-flavored yogurt! Ah-mazing!

Maple Cinnamon Oatmeal Muffins

Ingredients

  • 1 cup whole wheat flour
  • 1 cups old-fashioned oats like this one
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 cup maple-flavored greek yogurt like this one
  • 1 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 375°F. Lightly grease a 12-cup muffin pan with cooking spray and set aside.
  2. In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon.
  3. In a medium bowl, whisk together the oil, brown sugar, eggs, vanilla and Greek yogurt. Stir the wet ingredients into the dry ingredients until well combined.
  4. Divide batter evenly among greased muffins cups, filling each one almost full.
  5. Bake for 15-18 minutes or until muffins start to turn golden brown. Let muffins cool in pan for 5-10 minutes before removing to a wire rack to cool completely or enjoy.
