No Bake Pumpkin Oatmeal Cookies
These No Bake Pumpkin Oatmeal Cookies do have refined sugar in them, which I usually don’t use in my recipes, but in a no bake cookie recipe you want to have as little liquid as possible. The good thing is that the pumpkin and the oatmeal increase the health factor of these cookies!
When you select your pumpkin pureé, make sure to use a good one if not straight from the pumpkin! Good brands will have better flavor and texture than cheaper brands. Also, make sure to drain the liquid from the can.
Ok, so maybe there’s a bit of butter in this recipe. You can use coconut oil in this recipe with a 1:1 ratio!
Here are the items needed for this recipe. It’s worth it to have these things on hand for other recipes as well as the no bake pumpkin oatmeal cookies! This is such a great teaching recipe for kids – mine have been doing more and more in the kitchen now that they are all between the ages of 5 and 10 years old!
Having the kids help in the kitchen is a great way to teach them math and reading skills since they have to read the recipe and comprehend what the directions mean and then figure out what ingredients are needed and how to measure them. I did this when I was younger with both my mom and my grandma and I have amazing memories because of it.
No Bake Pumpkin Oatmeal Cookies
Yields: 1 1/2 dozen
Ingredients
1/2 cup pumpkin purée
1/2 cup (1 stick) butter
1/4 cup smooth peanut butter
1/4 cup milk
1/4 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
4 cups quick oats
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
Pinch of salt
Directions
- Line a cookie sheet with wax or parchment paper and set aside.
- In a medium saucepan, add the pumpkin purée, butter, peanut butter, milk and sugars.
- Bring to a boil under medium heat, stirring occasionally. Reduce heat to low and allow to simmer for 5 minutes. Remove from heat and allow to cool for 5 minutes. Stir in the vanilla extract.
- Add the quick oats, pumpkin pie spice, cinnamon and salt to a large mixing bowl. Whisk to combine.
- Pour the pumpkin mixture into the oats and mix well.
- Shape into 2 inch cookies and place on the lined cookie sheet.
- Allow to cool completely and ENJOY!!
