  • 2 Eggs
  • 1/3 Cup Yogurt
  • 1 Teaspoon Vanilla
  • 1 Cup Pumpkin
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1 1/2 Cups Flour
  • 1/2 Cup Chocolate Chips, plus more for top

Instructions

    1. Preheat oven to 325 degrees F. Light coat an 8×4 inch loaf pan with oil.
    2. In a large mixing bowl, whisk the honey, eggs, yogurt, and vanilla until smooth. Then whisk in the pumpkin purée or mix on low
    3. Add baking soda, cinnamon, and salt and stir to combine. Then add in the flour and gently mix, just until the flour disappears.
    4. Fold in the chocolate chips.
    5. Spread the batter into the prepared loaf pan.
    6. Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean. Let the bread cool in the loaf pan for 5 minutes.
    7. Gently transfer to a wire rack. Let cool at least 30 minutes before slicing. Enjoy!
