Ingredients

  • 1 15-Ounce Can Black Beans, drained and rinsed (or 3/4 cup dry beans, prepared)
  • 1 Cup Frozen Corn, thawed
  • 1 Cup Grape Tomatoes, chopped
  • 1 Red Pepper, chopped
  • 1 Cup Dry Quinoa
  • 1/4 Cup Cilantro, chopped
  • 3/4 Cup Cotija Cheese

Dressing

  • 1/4 Cup Olive Oil
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Lemon Juice
  • 1/2 Teaspoon Cumin
  • 1/4 Teaspoon Garlic Powder
  • 1/4 Teaspoon Salt
  • 1/8 Teaspoon Pepper

Instructions

  1. Prepare quinoa as instructions state on package. Normally add water to pot and bring to boil. Add quinoa, turn heat down to low, cover and cook for 15 minutes. Drain any remaining water.
  2. While quinoa is cooking, chop vegetables and cilantro and crumble cheese and add to large bowl.
  3. Add dressing ingredients to separate bowl and stir.
  4. Once quinoa is finished cooked and any remaining water is drained, add to salad and mix gently.
  5. Pour dressing over salad and once again, mix gently. Serve and enjoy!
