Easy Weeknight Dinners Volume 3
My two youngest kids were traveling to see their cousins for two weeks so I was free! I had my first grader but she is super easy. She could eat the same thing all the time if I let her. I think the one meal we loved was the organic frozen cheese pizza from Trader Joe’s. Super quick, inexpensive and really good! So now I’m trying to get back into the swing of things and getting this meal plan out to you all is my first step.
Each week I use the same template but switch up the meal ideas a bit according to what is on sale. You CAN create healthy meal plans with quick and easy weeknight meal ideas that kids love!
Meatless Monday
Quick and Easy Moroccan White Beans (Loubia)
This white bean stew is super easy and you get your nutritious beans and tomatoes and turmeric!

Taco Tuesdays
Moroccan Spiced Vegetarian Cabbage Rolls
Ok, so it’s not tacos, but still full of spices and delicious, right?

Pasta Wednesdays
Roasted Brussels Sprouts Pasta
Brussels Sprouts are so good for you and if you cook them just right they are delicious! Make sure you spring for the good cheese on this otherwise very inexpensive meal.

Crockpot Thursdays
Turkey Crockpot Chili
Mexican dinner in the crockpot. How much better can it get? Easy peasy yummy meal.

Fridays
Ground Beef Casserole
I just love this casserole. It’s so simple – just throw everything together in a casserole dish and bake to set and the flavors will blend together. Very simple but satisfying.

Easy Saturdays
Scrambled eggs, toast, smoothies = $8
Leftover Sundays
Refrigerator Soup or leftover pot pie = $0!!
