Easy Weeknight Dinners Volume 2
Have you ever gone to the grocery store for a week’s worth of food and felt overwhelmed by the cost? If you plan accordingly and go in with a list, it’s really not as daunting as it seems. With this template, you can create some really fabulous Easy Weeknight Dinners for the Whole Family!
Each week I use the same template but switch up the meal ideas a bit according to what is on sale. You CAN create Easy Weeknight Dinners with quick and easy weeknight meal ideas that kids love!
Meatless Monday
Red and White Lasagana
My daughter loves lasagna and she loves alfredo, often asking me to mix red and white sauce for her spaghetti. This combination made for a very yummy lasagna! I followed the recipe as is (except for using cottage cheese instead of ricotta) and used 1/2 cup of Newman’s Own Alfredo Sauce on top and then covered that with a layer of cheese. I made two small lasagnas and put on in the freezer. This is the perfect size for my family so we don’t end up throwing away leftovers.

Taco Tuesday
Crockpot Chicken Burrito
I love this recipe from TheKitchn
Chicken, beans, fresh tomatoes, corn, homemade chicken stock, brown rice.
Top with cheese and sour cream.
Makes enough for TWO full meals! Hello leftovers.
