Santa Fe Chicken Pasta
Ingredients
- 2 Tablespoons Olive Oil
- 1 15-Ounce Can Black Beans
- 1/2 Cup Frozen Corn
- 1 Cup Tomatoes, chopped
- 1 Red Pepper, chopped
- 1 Pound Boneless Chicken Breasts, Chopped
- 8 Ounces Curly Pasta
- 2-3 Tablespoons Chopped Cilantro
- 1 1/2 Cups Heavy Cream
- 1 Cup Chicken Broth
- 1 Teaspoon Chili Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 2 Teaspoons Cumin
- 2 Teaspoons Paprika
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Onion Powder
- 1/4 Teaspoon Oregano
Instructions
- Heat the olive oil over medium-high heat in an extra-large skillet or dutch oven.
- Add chopped chicken and let cook on each side a minute or two and let the chicken brown a bit.
- Add the red peppers while the chicken is cooking.
- Then add the cream, broth, and spices and make sure to stir well to dredge up the pieces stuck to the bottom.
- Add the pasta and bring to a boil. Once it's boiling, add the tomatoes, corn, and beans. Stir and lower heat to medium-low and cover for about 20 minutes or until the pasta is done. It takes a bit longer with all of the other ingredients!
- Once it's finished cooking, stir in cilantro and cotija cheese, if desired. Top with avocado if you prefer.
