Guacamole Ingredients:
- 2 Large Ripe Avocados
- 2 Fresh Garlic Cloves, finely minced
- 2 Tablespoons Lime Juice
- Salt and Pepper, to taste
Taco Cup Ingredients:
- 1½ Cups Sour Cream
- 2 Teaspoons Chili Powder
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Garlic Powder
- Salt and pepper, to taste
- 1½ Cups Refried Beans
- 1 Pint Grape Tomatoes, chopped
- 1 Cup Mexican Cheese Blend
- 15 Ounce Can Black Olives, drained and chopped
- 3 Large Green Onions, sliced thin
Instructions
For the Guacamole:
- Slice the avocados in half lengthwise and remove the pit. Scoop the flesh out with a spoon into a large bowl.
- Add garlic and lime juice, and season with salt and black pepper, to taste.
- Mash with a fork until thoroughly blended and smooth. Cover tightly and set aside.
For the Taco Cups:
- Add the sour cream, chili powder, ground cumin, and garlic powder to a bowl. Season with salt and black pepper, to taste, and stir to combine. Set aside.
- To assemble, add approximately 2 tablespoons refried beans to the bottom of each cup with a small spoon. Then add a layer of guacamole and 2 tablespoons of the seasoned sour cream to each cup.
- Finish each cup with a layer of chopped tomatoes (roughly 3-4 per cup), and 1 tablespoon of cheese, 3-4 chopped black olives, and a few green onion slices.
- Serve with gluten free tortilla chips, pita chips or crackers.
