Easy UnStuffed Pepper Casserole

I love this time of year. Seriously. I am sure I have mentioned it hundreds of times and perhaps you remember, but I will tell you again. I LOVE it. The crispness in the air, the colors of the trees changing into glorious shades of red, orange and yellow, the smell of woodstoves beginning to warm up for winter use, and the feeling of anticipation. It inspires me. I’m not entirely sure why. Maybe it’s knowing that family time is imminent, special days with special food with the ones you love.

So it’s during these months that I want to do things other than cook and opt for quick healthy recipes. I want to play outside with the kids looking at what’s fallen from the trees. Gather up leaves and watch them jump in the piles. Get ready for the cold months putting away summer toys and organizing coats and hats in the closet. This is a great unstuffed pepper casserole recipe that creates a delicious, hearty winter meal in minutes. It’s really that fast. I even use ground turkey and my family gobbles it up.

Quick and Easy UnStuffed Pepper Casserole

Easy UnStuffed Pepper Casserole

INGREDIENTS
1 lb ground turkey
1 small onion
2-3 red peppers, chopped
2 tomatoes, chopped with juices
1 cup chicken stock
1 tbsp tomato paste
1/2 cup rice (I use yellow)
1 tbsp worcestershire
1 tbsp fresh oregano or 1 tsp dried
1/2 tsp garlic powder or 3 large cloves
pepper and salt, to taste
2 tbsp fresh parsley

DIRECTIONS
1. Cook onion on low until translucent, then turn to high and add ground meat. Cook until done.

2. Add all ingredients except parsley. Bring to simmer and cook 20 minutes or until rice is done.

3. Add parsley and enjoy!
