It’s hard to find variations on healthy recipes to start out the day. But this oatmeal recipe is sure to keep your family happy more than once a week. The best thing about oatmeal for breakfast is that you can put it in the fridge ahead of time and enjoy it in the morning.
Why I Love This Oatmeal Recipe
Things have been pretty crazy and difficult in my life for the past few years – a sick, colicky baby #3 very soon after baby #2 and both my parents succumbing to their individual illnesses. I’ve been eating erratically and very emotionally – you know, when you have no appetite and then suddenly the only thing you can eat without feeling nauseous is a doughnut or waffles or something equally unfriendly for daily consumption.
I’ve recently joined Beachbody and I LOVE it! It’s so great. I drink the shakeology every day and it really curbs my cravings for those sinful treats. Well, I’ve also gone through some pretty intensive therapy to help wrap my mind around my pain and come up above water to breathe and be a person again.
Having a structured schedule like Beachbody is good for me. I am eating what I normally would eat anyway – veggie burgers, tuna wraps and oatmeal recipes. Healthy meal plans have always helped me, which is why I like to post my meal plans on this site just in case they may help someone else.
So Beachbody has me plan out my meals, my snacks, my exercise and it tracks how many times I’ve worked out each week. Seeing that number is so very motivating to want to do it again, especially knowing my core group of members are working out each day and being motivated by them. I haven’t paid much attention to the scale – I’ll probably do a weigh in each week or so – because the best thing about this program is that I FEEL good! Each day I exercise, I can do more, I struggle less, and I feel better.
So I mentioned one of my favorite things about this recipe is that you can actually put everything in a mason jar and store overnight in the fridge. I don’t use the agave syrup, but if you need extra sweetness, it’s the best thing to use. I actually like to add ONE-HALF cup of vanilla shakeology. All I do is mix everything up and store overnight, then in the morning I either leave it out for awhile to warm it up to room temperature OR I warm it up in the microwave for 30 seconds (without the lid!). You could also put the jar in a bowl of warm water to warm it up.
