Gnocchi Recipe with Pomodoro Sauce


  • 3 Large tomatoes
  • 2 Garlic cloves
  • ½ Onion chopped
  • ½ Pound gnocchi pasta
  • 1 Tbsp chopped parsley leaves
  • ¼ Cup olive oil
  • ½ Carrot sliced
  • 3 Bay leaves
  • Salt and pepper to taste


  1. In a food processor, combine the onion, tomatoes, garlic, 1 tbsp parsley, and carrot. Pulse until smooth.
  2. Transfer to a sauce over medium heat, and add the olive oil, salt, and pepper.
  3. Cook and stir for 5 minutes.
  4. In a pot over medium-high heat, boil water, add the bay leaves and place the gnocchi pasta.
  5. Cook following the packaging instructions.
  6. Drain the water, discard the bay leaves and add the sauce.
  7. Mix and then serve in bowls.
  8. Top with the parmesan cheese and the remaining parsley.
  9. Serve and enjoy.

Recipe Notes

For a spicy kick add some red pepper flakes to the sauce.
