Easy Vegetable Pasta Recipe


  • 1 box thin spaghetti
  • 1-2 zucchini shredded lengthwise
  • 1 carton cherry or grape tomatoes cut in half
  • 1 bunch asparagus chopped
  • 2 cloves garlic
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1-2 tsp dried basil or handful fresh basil
  • parmesan cheese


  1. Boil spaghetti as directed.
  2. Add oil and garlic to pan and sauté for 1 minute on medium low. Add chopped tomatoes and asparagus and cover. Simmer for 10 minutes then add zucchini and basil and cook until zucchini is just wilted.
  3. Add vegetable mixture to spaghetti and serve with parmesan cheese.
