Baked Pumpkin Spice Donuts

Regular doughnuts are loaded with fat and calories and other bad stuff. These baked doughnuts are a light and healthier version!

Ingredients

  • For the Donuts
  • ¼ Cup canola oil
  • 2 Large eggs
  • ½ Cup honey
  • ½ Cup pumpkin puree
  • ½ Cup flour
  • 1 Tsp pumpkin spice
  • ½ Tsp cinnamon
  • ½ Tsp nutmeg
  • ½ Tsp salt
  • 1 Tsp baking powder
  • 1 Cup flour
  • For the Topping
  • 3 Tbsps boiling water
  • 1/8 Cup cornstarch
  • 2 Tbsps honey
  • ½ Tsp cinnamon
  • 3 Drops orange coloring
  • ¼ Cup orange sprinkles

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl add the canola oil, eggs, flour, honey, pumpkin puree, salt, and baking powder.
  3. Beat on low speed until mixture is smooth.
  4. Spoon batter three-quarters of a way into lightly greased mini-donut pans.
  5. Bake for 12 minutes or until golden brown.
  6. Let cool then transfer to a flat dish.
  7. Cut out donut holes in the centers.
  8. Mix the water, cornstarch, honey, cinnamon, and orange coloring together.
  9. Dip the top of each doughnut into the mix.
  10. Garnish with orange sprinkles.
  11. Serve and enjoy.

Recipe Notes

For a bolder flavor add in ¼ tsp of ground ginger.
