Garden Fresh Black Bean Quesadillas

Ingredients

  • 1 can black beans rinsed and drained or 1 cup dry beans, soaked and boiled
  • 1 fresh tomato
  • 2-3 tablespoons fresh cilantro
  • 2 ears freshly cooked corn on the cob
  • 2 scallions
  • 1/2 cup pico de gallo
  • salt and pepper to taste
  • 1/2 teaspoon cumin
  • 1/8 teaspoon garlic
  • 1/2 zucchini diced (optional)
  • flour tortillas
  • shredded cheddar cheese
  • sour cream optional
  • guacamole optional
  • 2 tablespoons olive oil

Instructions

  1. Combine all ingredients up to spices and add zucchini, if desired. Mix well and let sit for a few minutes for flavors to blend.
  2. Heat up frying pan or griddle and add olive oil.
  3. Lay tortilla flat on griddle to get oil over entire thing.
  4. Add a bit of cheese just to cover half of tortilla, then bean mixture, then more cheese.
  5. Fold, and cook over medium-low heat. Flip over after a few minutes or tortilla is brown.
  6. Remove from heat when tortilla is brown on both sides and cheese is melted through.
  7. Let sit for a few minutes then enjoy with toppings!

Recipe Notes

I like to use flour/corn tortillas if not homemade.
