- 1/2 Cup Greek Yogurt (plain or vanilla)
- 1/3 Cup Honey
- 2 Large Eggs
- 1 Teaspoon Vanilla Extract
- 1 3/4 Cup Flour
- 1/2 Teaspoon Salt
- 1 Teaspoon Baking Soda
- 8 Half-Pint Jars (or 16 Four Ounce Jars)
- Wash jars and let dry completely before using.
- Preheat oven to 325°. Prepare the mason jars by greasing the insides of the jars with cooking spray or coconut oil.
- Stir yogurt and honey together and then lightly beat in the eggs and vanilla.
- In a separate bowl, combine flour, salt and baking soda.
- Mash the bananas with a potato or hamburger masher or use a hand mixer. Then, mix everything together.
- Scoop batter with a cookie scoop into mason jars filling halfway full. For 8oz jars it takes 4 scoops to fill it halfway. Wipe off any spills on the jars before baking. Do not add the lids. I used both pint jars and half-pints. You can literally use any size jar you want just fill it halfway
- Mason jars really should not be placed in a dry oven. Put the mason jars in a baking dish with sides and add some hot water.
- Bake in oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Remove the jars from the oven and screw on the lids and rings to the jars while the bread is cooling (when cool enough to touch!). The jars will seal as the bread cools down.
- The jar will seal itself and will PING! If you don't hear that sound, press down on the lid. If there is no give to it, it's all sealed.
If your bread bakes too tall, you can try to stuff it down into the jar and put the cover on.
